Really easy Japanese Red Bean Ice Cream Recipe to make at home - Adzuki bean ice cream recipe

I reckon Adzuki Red bean is one of the most popular flavours in so many Japanese sweets and desserts.  Its importance in lollies and sweets is just like our love for chocolate in Western desserts.  Even though I have been in Japan for a few years now I miss the red bean taste in so many desserts, reminds me so much of holidays there in Japan.

To be truthful, there is variety of beans to make Anko but if you say Anko in Japan, most of people will imagine red bean paste because red bean paste is most commonly used in a wide range of confectionery.

A lot of factory-made red bean ice creams are just your normal mass-produced ice creams made with cheap ingredients and thickeners, with a tiny blob of the red-bean paste (also called Anko https://en.wikipedia.org/wiki/Red_bean_paste) mixed into it.

But this Red Bean ice cream recipe has a good amount of the adzuki bean paste so that you really get both its flavour and the extra creaminess from its starch. You can add a little vanilla if you want but that is completely optional; I like the full on red bean flavour but some may think the vanilla enhances it.

If you want to go all artisan ice cream with this one, serve it in scoops sprinkled with a little matcha powder (brightly coloured green tea powder).

Ingredients

  • 100 g Adzuki red beans
  • 100 ml Water
  • 250 ml Coconut milk
  • 250 ml Thickened cream
  • 5 g Corn flour
  • 200 g caster sugar
  • pinch salt
Servings would be at least 4-6 people.

Directions

  1.     Soak the beans overnight in plenty of cool water.
  2.     The next morning, drain off the water, rinse the beans and drain again.
  3.     Place the beans together with the water in a pot.
  4.     Bring to boil, and then turn down the heat.
  5.     Cover and simmer slowly for approximately 1.5 hours until the red bean mixture is reduced to just 2 cups.
  6.     Add sugar and stir while bringing mixture to boil. Reduce heat to a simmer again.
  7.     Mash the beans against the side of the pot with a spatula or spoon until the texture of the red bean soup is thick and lumpy. Kind of a red bean (adzuki/anko) jam.
  8.     In a bowl, add salt and corn flour to coconut milk and cream and stir thoroughly until there are no more lumps.
  9.     Add the coconut milk/cream solution gradually into the red beans, stirring until well-mixed. Remove from heat.
  10.     When the mixture has cooled down, give it a thorough whisk, then pour into ice cream molds and freeze for 6 hours or until firm.

note - This ice cream is best served when just frozen. If its been in the freezer too long it becomes too hard, let it soften slightly in the fridge or at room temperature for a little before consuming.

Not a bad ice cream at all - Japanese Dango, red beans and vanilla ice cream

Japanese Dango, red beans and vanilla ice cream.  This wasn't bad ice cream, just that it is plain vanilla.
It did have a lot of extrad goodies like red beans in the middle (you can just see them in the photo) and Dango. In case you don't know, Dango is a Japanese dumpling made from mochiko (rice flour) like Mochi.

Japanese red bean, vanilla soy, green tea ice cream

An amazing looking ice cream in our local Japanese restaurant. All of us chose to have the special ice-cream dessert, that  is literally a triple-decker ice cream dish that kind of appears to be like akin to a volcano or a multi-coloured X-mas tree. The top layer is red bean ice cream, followed next to vanilla soy icecream and green tea ice cream. The green tea ice cream was a tad strong if you had it by it's self, nevertheless if you had it together with the creamy vanilla soy, the sweetness of the vanilla smoothed the flavours out pretty nicely. The red beans were cooked just right not too sweet like some places have. A good ice cream recipe to try at home.

Japanese Fish Ice Cream Wafer

I had this Japanese Fish shaped ice-cream the other day. Its a delicate crunchy wafer molded in a fish profile. Now being Japanese it could actually be fish ice cream but it is not. Inside is white vanilla icecream along with a layer of adzuki beans along at the base of it. Its really good. Both the beans and the ice cream is not too sweet and not too much ice cream or an excessive amount of red beans. I would certainly buy this again.

Portable Soft Serve Machine Japanese Style

This Japanese Ice Cream is like your own portable soft serve machine :) . As you can tell by the photo it is a little flexi bag thingy full of soft serve ice cream that you squeeze out into a bowl or cone .. or even just squeeze and suck it out if you can’t wait.

This one is Lotte brand and was Red bean and vanilla flavour and I have seen a chocolate chip vanilla ice cream one as well.

Green Tea Ice With Red Bean and Ice Cream Only In Japan

Nice looking Japanese ice cream dessert found at a little cafe. This delicious looking thing is green tea ice, topped with nice sweetened red beans and then on top of all that a good scoop of vanilla ice cream.

It is a bit of a strange concoction, I am not that great a fan of shaved ice and ice cream together but many Japanese (and, I have heard, Hawaiians) are. For me the recipe of creamy ice cream and watery ice just doesn’t gel.

Marunaga Japanese Plum Flower Ice Cream

These little Japanese ice creams from Marunaga look absolutely fantastic. I haven't tried one, yet, but I am betting that they would be yummy. There are two flavours, both with Red Bean in the middle. I think I would like the Vanilla with nice sweet, tender Red Beans rather than the Green Tea with Red Bean.
And the shape of these little ice creams is meant to be shaped like a flower from a plum tree, pretty.
Marunaga say they were good enough to win a Gold medal in Europe for these Vanilla ice creams and people wrote in for Green Tea flavour so they started making that as well.

Simple Japanese Red Bean Ice Cream Recipe

I haven't posted many Japanese Ice Cream recipes so I am starting to from now.
This ice cream recipe is really good - Japanese Red Bean Ice Cream. I have made Red Bean (azuki) ice cream before but it was a big effort to make, this ice cream recipe is very simple. So here you go a very simple Red Bean Ice Cream to make and enjoy at home. Double Yum :)

Ingredients
1/2 cup sugar
3 egg yolks
1 cup milk
1 1/2 cups sweetened red bean paste
1 1/2 cups heavy whipping cream

Method
1) Beat sugar and egg yolks in a large bowl until it's pale and yellow then set aside.
2) Bring the milk to a boil in a heavy saucepan and then turn off heat.
3) Slowly whisk hot milk into the yolk and sugar mixture. Pour the entire mixture back into the heavy saucepan.
4) Put the saucepan on a very low heat and stir constantly, till it thickens. Do not let it boil! (You are basically making a custard here)
5) Take the mixture off the heat and whisk in the red bean paste really well. Strain the whole mixture into a large bowl to remove lumps.
6) Let it cool for a few minutes and then stir in the cream. Cover and refrigerate overnight.
7) Process according to your ice cream maker's instructions.
8) Important step - share with friends and enjoy this great Japanese Ice Cream!

Japanese Yam and Red Bean Ice Cream

Japanese Red Bean ice cream

Japanese Red bean ice cream (Azuki Ice Cream).

Make your own!!

1 cup dry adzuki beans
1/3 cup white sugar
2 teaspoons lemon juice

3 1/2 cups water

1 cup milk
1 cup heavy cream
4 egg yolks
2/3 cup white sugar
1 teaspoon vanilla extract or 1 whole vanilla BEAN. (Use a knife to scrape the inards out of a whole vanilla bean)

In a saucepan, combine the azuki beans, 1/3 cup of sugar, lemon juice and water. Bring to a boil, and boil uncovered for 3 minutes. Reduce the heat to low, and simmer for 2 1/2 to 3 hours, or until the beans are very tender. When done, the beans and liquid should amount to 3 cups. If not, add more water to compensate.
Strain the bean mixture through a sieve - I use a wooden paddle for this, and discard the bean skins. Refrigerate for about 2 hours, or until cold.

In a saucepan, combine the milk and cream. Bring to a boil over medium heat. While you wait for that to boil, whisk together the egg yolks and 2/3 cup of sugar in a medium bowl. When the cream and milk come to a boil, ladle about 1/4 cup of the hot liquid into the bowl with the egg yolks, and whisk until smooth. Pour the yolk mixture into the pan with the cream, and cook over low heat until thick enough to coat the back of a metal spoon. This should take about 5 minutes. Do not cook too long, or you will get lumps. Remove from the heat, and stir in the vanilla. Refrigerate until cold.
Once both of the mixtures are cold, stir them together. Pour into an ice cream maker, and freeze according to the manufacturer's instructions.
